Ingredients

Chicken

  • 1 1/2 to 2 pounds boneless, skinless chicken breasts or thighs
  • Ancho chili seasoning, enough to generously coat the chicken
  • 1 tablespoon olive oil, if needed for cooking
  • Salt and black pepper, as needed

Rice and warm toppings

  • 2 cups cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 1/2 cups corn, frozen, canned, or fresh
  • 1 tablespoon butter
  • Juice of 1/2 lime
  • 1 to 2 teaspoons dill pickle juice
  • Salt, to taste

Cold toppings

  • 1/2 cup dill pickles, chopped
  • 1/2 small onion, finely diced
  • 1/2 cup shredded cheddar or pepper jack cheese
  • Chopped cilantro, optional
  • Crushed tortilla chips or crispy tortilla strips, optional

Creamy pickle-lime sauce

  • 3 tablespoons sour cream or plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon dill pickle juice
  • 1 to 2 teaspoons fresh lime juice
  • 1/2 teaspoon garlic powder
  • 1/4 to 1/2 teaspoon ancho chili powder
  • 1/2 teaspoon honey
  • Salt and black pepper, to taste

Directions

1. Cook the chicken

Remove the ancho-seasoned chicken from the refrigerator. Heat a skillet over medium-high heat and add a small amount of olive oil if necessary. Cook the chicken until browned on both sides and the internal temperature reaches 165F. Remove it from the skillet and let it rest for 5 minutes before slicing.

2. Cook the corn and beans

Keep the same skillet on the heat after removing the chicken. Add the corn and black beans directly to the pan and stir them through the browned ancho-seasoned bits left from the chicken. Cook for 3 to 5 minutes, until hot and lightly browned. Season with salt and pepper if needed.

3. Season the brown rice

While the chicken rests, combine the hot cooked brown rice with the butter, juice of 1/2 lime, 1 to 2 teaspoons pickle juice, and salt to taste. Stir well.

4. Make the sauce

Combine the sour cream or Greek yogurt, mayonnaise, pickle juice, lime juice, garlic powder, ancho chili powder, honey, salt, and pepper. Stir until smooth. Add another teaspoon of pickle juice or lime juice if you want a thinner drizzle consistency.

5. Prepare the cold toppings

Finely dice the onion and chop the dill pickles. Keep both cold until serving. For a milder raw onion flavor, soak the diced onion in cold water for 5 to 10 minutes, then drain well before serving.

6. Build each bowl

  1. Add seasoned brown rice to the bottom.
  2. Add the warm corn and black beans.
  3. Top with sliced ancho chicken.
  4. Add cold chopped pickles and diced onion.
  5. Add shredded cheese.
  6. Drizzle generously with the creamy pickle-lime sauce.
  7. Finish with cilantro and crushed tortilla chips or crispy tortilla strips if desired.

Serving notes

The temperature contrast is intentional:

  • Hot: rice, chicken, corn, and black beans
  • Cold: pickles, raw onion, and pickle-lime sauce
